These started as a simple snack idea and turned into the kind of thing people hover around before dinner. The name sounds dangerous. The real danger is assuming there will be leftovers.

THE CENTER OF ATTENTION

The filling is softened cream cheese, shredded Gouda, chives, and W1ld Rub. It gets layered between Club crackers with two slices of fresh jalapeño in the middle, then the whole stack gets wrapped in thick-cut bacon.

Finished cream cheese bacon bombs wrapped in thick-cut bacon and glazed with W1ld Sauce
That is a lot of creamy filling held together by bacon and optimism.

SMOKE FIRST. GET SAUCY LATER.

Cherry or Competition Blend brings the smoke. W1ld Rub goes over the bacon, and W1ld Sauce joins near the end so it can tighten without burning. They stay on until the thick-cut bacon is crispy and everybody has started asking if they are ready yet.

THE ONLY REAL RULE

Do not let the clock boss the bacon around. When the wrap is crispy and the sauce is set, the bomb is ready.

Two crackers. One creamy center. Grow up—we're still talking about food.
